The whole coffee cherry is dried in the sun for 3 to 6 weeks with the fruit intact. This produces the sweetest, fruitiest, most complex coffees with pronounced berry and wine-like notes. However, natural processing requires precise management to avoid fermentation defects.
The fruit is completely removed before drying, producing the cleanest, most transparent cup that showcases the bean’s inherent flavour characteristics without fruit influence. Washed coffees typically display brighter acidity, floral notes, and greater clarity.
A hybrid of natural and washed methods – the skin is removed but varying amounts of fruit mucilage are left on the bean. Yellow, red, and black honey refer to the decreasing amount of mucilage left and the progressively longer drying time required.
